ZOMG good!

This is a recipe for delicious salmon that I got from another lady on a message board.  She usually has some delicious recipes so I thought I'd try this one out while Mr. Dan was away (he doesn't do fish).  I'm REALLY glad I did.  It's FANFUCKINGTASTIC!

Enjoy!

What you'll need:

Piece of salmon big enough to serve however many you're feeding
1 container of pesto (or make your own - basil, pine nuts, olive oil, garlic in food processor)
1 can of corn
1 can of black beans
Container of salsa
Cilantro
Lime

What you do: 
Preheat oven to 350 degree F.  
Drain corn and black beans, mix with salsa and pour over the bottom of a deep baking dish (I like Pyrex).  Lay the piece of salmon on top - cover the fish with a decent layer of pesto.  
Squeeze lime juice over the whole thing, top with a sprikling of cilantro to taste. 
 Bake for 45 minutes, or until fish becomes flakey in the middle (test with fork).
Devour!!

Wedding Wednesday - Shit just got REAL!


I ordered my dress less than 2 months ago.  I was told it would arrive in 4-6 months.  That would put me at Feb - April for the dress.  Perfect.  It would only sit in a closet for a little while and then it would be altered and ready to go.  Wellllll I got a call last night that my dress is in.  It's done.  Less than 2 months.  And my first thought was "HOLY CRAP! SHIT JUST GOT REAL!".  I'm not even kidding.  It all became real when they told me I had a dress.  Now I won't be in to get it until January, there's no time with family and Christmas and my birthday and the like.  But January 10, 2011 I will be going in to try on and pick up my dress.  For those who don't remember what it looks like...

It will be ivory when I get the actual dress...but they only had white in store.  Anywhore, this is my dress.  It's here.  And shit just got very real.

NOMMMMMM...slow cooker beans...

Here is some nom for your first day of December.  



What you need:

1 lb
dry white pea or navy beans
454 g
1
large onion, chopped
1
1 can (5.5 oz)
tomato paste
1 can (156 mL)
3/4 cup
ketchup
175 mL
3/4 cup
molasses
175 mL
2
garlic cloves, minced
2
1/4 cup
brown sugar, packed
60 mL
2 tsp
dry mustard
10 mL
1/2 tsp
salt
2 mL
1/2 tsp
black pepper
2 mL
* do not add extra molasses: it will make the beans hard instead of tender

What to do:

Rinse beans and soak overnight in water. Drain.
Place beans in a large pot, cover with water and bring to a boil. Simmer for 10 minutes. Drain and rinse beans.
Transfer the beans to a slow cooker and add enough water to completely cover them (I used about 6 cups). Set the temperature to LOW and cook for 10 to 12 hours. Drain, but save 2 cups of cooking liquid.
In a separate bowl, combine onion, tomato paste, ketchup, molasses, garlic, sugar, dry mustard, salt and pepper. Stir in your 2 cups of cooking liquid and mix well.  Pour over beans in slow cooker and stir. Cover and cook on LOW for 4-6 hours or on HIGH for 2-3 hours....your choice. 
Sprinkle with green (or red) onions.  ENJOY!

OMG I "won"!!

Got a call from Table Charms today and apparently I won a draw that I entered at a bridal show. What did I win, you ask? Well I won the right to go to a 90 minute presentation where they try to sell me over-priced pots and pans and then they give me a g/c for $250 worth of rings from JVL Jewellery (which doesn't have any rings myself or FBD likes) and a 3 day/2 night stay to a hotel in North America. Sounds pretty good, eh? Well I did some research ('cause I'm hella skeptical) and found out that yeah you get these things but you have to pay a deposit to get the hotel and they get to choose where it is...oh and you pay the flights.




Thanks for the offer Table Charms but I'll keep my Friday night for myself.

MIA...my life has exploded.



Dearest loyal reader,
my life has exploded lately.  We've been having our house shown (the landlord is sellin' 'er), FSIL is having a baby, there are birthdays up the wazoo and my uncle is in a coma.  So basically my head is trying not to explode.  Because of all these wonderful factors coming together at once I will be posting few and far between for a little while.  I'm just going to try and get my life back in order.  I'll try to pop by for Wedding Wednesdays and Friday Fives but I can't promise a whole lot else until these shenangins are sorted out.  Thanks for bearing with me.  I'll see you on the flip side...

My 6 Challenge

I have 2 weeks down and 4 weeks left on my 6 challenge.  I'm happy to report that I've been exercising MUCH more, eating all my fruits and veggies and living a healthier lifestyle.  I haven't lost any more poundage since the last time I weighed myself but that could just be because (TMI WARNING!) of where I'm at in my cycle currently.  I find I weigh a little more during that week or so...so yeah...sorry about that.  LOL

Anyways, my current plan for the week is to continue with the healthy eating.  Tonight after dinner I'm either going to take up some yoga or head to the gym for some weights.  I haven't actually been to my gym in a week but I've been supplementing with free weights at home, yoga on demand and lots of walking and swimming.  Tomorrow Mr. Dan and I have a swim date and Saturday is yard work day.

So that's the update for now.  Hopefully by next week I'll be down a lb or two!

Baby!!!!!!

No.  I'm not pregnant.  But my future sister in law is.  YAY!!!!

I've never really thought about being an auntie.  I've always wanted to but I know that my sister isn't really sure about kids and my brother is only 20 so he's no where near the "kid phase".  I've got some great friends who have wonderful children.  I love them all to death but it's not the same as having your own lil niece or nephew.  Mr. Dan and I are already spoiling this child rotten - he, or she, has all new bedding, pjs, toys, bath stuff, books and there's more coming!  I'm very excited and just wanted to share my news...before I run off to the baby shower.  Hope everyone is having a great weekend!!

Wedding Wednesday- Ladies' Attire Edition


It's that time of the week again, Wedding Wednesday!!!

This past weekend the ladies and I went dress shopping (for them).  We were all anxious to get some wedding fun going and they all wanted to get the dresses sorted out so myself, Kim (my BFF and MOH), Kelsey (my sister and BM) and Maris (my BFF and BM) headed out to look.  Kaylee (my rockin' friend and BM) couldn't make it this trip.  But she's got something in mind, and I'm happy as long as she's happy!

So the only parameters for the dresses were that they be knee length and in cherry red from Alfred Angelo.  The ladies were supremely happy that I wasn't being fussy and all got to pick dresses they loved!

So without further ado here are the dresses:

The challenge of sixes!

So it's still raining.  What a drag! You'd think I live in England or something.

Anywho, I wanted to chat today about my new goals.  Every so often a set some goals for myself. I think it's good to have something to shoot for.  It keeps me motivated.  Lately they've been healthy lifestyle goals.  This one is no different.  I want to make it a healthy lifestyles goal - and I'm going to do it with the help of my team over at Spark People.  (No this isn't a plug, it's just the site I use....)

Moving on....between Sept 1 and Oct 25 of this year I lost 10 lbs.  wo0!! Okay, enough of my attention hoaring, now I've decided that since I wasn't really even trying to lose weight that I could probably do it again.  So I've set some new goals for the upcoming months.  The challenge started on November 1 and will run until December 12 (Mom's birthday!).  I want to eat 6 servings of veggies/fruits per day (thanks for this one Mrs. Mutley) and I'd like to lose 6-10 lbs.  That gives me 6 weeks (from the start) to get 'er done.  I don't think it's an unreasonable goal.  6 weeks, 6 lbs, 6 veggies.   I think I'm also going to do a weekly update...so look for my update next week to see how my 6 Challenge is going.  And feel free to join in!

Rainy days in our future...

So it's been raining non-stop for what seems like days now.  Everything is wet and Environment Canada says it's going to last until at least mid-week.  It makes me not want to do anything.  Seriously, I just want to stay home with soup and hold-up in our flat until it all clears.  The dogs aren't much for it either.  They go out, do what they need to do and run to the safety of the doorway.  Mr. Dan doesn't seem too bothered.  He's waiting for the new Call of Duty to come out so he's doing research on all the neat little things this game can do and playing demos and whatever else video game guys do while they wait for the next "it" game.  However, I'm going dress shopping with 3 of my 4 wedding party ladies today...should be interesting! You'll see a post about our successes (or lack there of...it all depends on today) on Wedding Wednesday.  Wish us luck...oh and hopefully everyone brings rain boots! We're gonna need 'em!

Keep the Large's in your thoughts...

Mr and Mrs. Large of (near) Truro, NS won $11.2 mil in the lotto this summer. (Click here to read the newspaper article)  They have spent it all.  But none of it was spent on themselves.  Every penny spent was given away.  Churches, fire departments, family, charities, hospitals...everyone got a slice of their good luck pie.  Now they are facing another challenge - Mrs. Large has just finished cancer treatments.  I'd just like to ask everyone to keep these wonderful, generous, good-hearted people in their thoughts and prayers.  May they enjoy many more blissful years of marriage together.

Wedding Wednesday - Advice for brides to be...



Usually on Wedding Wednesday we concentrate on all things shiny, pretty and wedding-y.  Well this week I thought I'd take a different route.  I have a few friends that are getting married in the (nearish) future and for some reason I've become the group "expert" (I"m using this term VERY loosely) on weddings and wedding advice.  I'm not really sure how this happened.  Maybe it was my time on The Knot...or just my general "I need to know everything about this subject before I dive in" attitude but I've been getting some questions lately so I thought it might be neat to address some of them here.  So here we go:

Q) When should I order my wedding dress?
A) You should try and give yourself enough time that your dress can be ordered, made, shipped and altered without panicking the week before the wedding.  A good rule of thumb is order 6-9 months out.  Some designers take up to 6 months to create a dress and ship it, while others can rush it in a few months.  Either way, unless you're buying a sample right off the rack I would give yourself lots of time.  Better to have it sit in your closet for a month or two, then to be calling the store the month before the wedding.

Q) When should I ask my wedding party?
A) I'm a big believer in waiting.  You need to at least have a firm date and a venue before asking your party.  This means your contract is signed and it's a done deal.  We asked about 10 months out.  Normally I would say, again, 6-9 months out.  You don't want to ask too early because, let's face it, relationships can change.  But you also don't want to leave it to the last minute and have people scrambling for money.

Q) What do I need to do first?  What needs to be booked and when?
A) Big question.  Number one thing you need to do is the budget.  You need to know how much you are working with and then go from there.  After that you need a guest list and then move on to the date/venue/caterer/etc.  The Knot has a great checklist.  Or check out my to-do list on mine and Mr. Dan's  planning site.

Q) How many people should I invite? How do I know how big to make my guest list? Who goes on it?
A) That's a really personal question.  How many people do you want there? How many people can your venue hold?  Never invite more people than your venue can hold.  If you invite more and they all show up...well basically you're screwed!  I would suggest making a guest list with everyone you want to be there.  Make sure you ask mom and dad/future in-laws for names as well.  Then, if it's too large, go through and start removing people that you aren't that close to, or people that you haven't seen in X years, co-workers, etc.  Also, please don't make an A and a B list.  That is so rude.  It's like saying to the B list "You weren't important enough to come but now that one of my A's can't come...would you like to?".  RUDE.  And it would piss me off.  I'd rather not get an invite, personally.

Raising Hope

Have you seen this show?!  First I'll tell you that it's not A+ hilarity.  It's not going to win many awards but my goodness if you're looking for some stupid laughs this is the place to go.  The basic premise of the show is that  Jimmy (played by Lucas Neff) had a one night stand with a crazy lady.  Crazy lady killed some dudes and heads to jail. He finds out that she got knocked up and when she's sent to the electric chair he gets the baby - Princess Beyonce (whose name is changed to Hope).  It's a great show, created by the same guy that did My Name is Earl (which is a show I HATE...but I digress...) and although you get some of the same silly situations (how did Maw Maw, the dementia ridden great grandmother, end up going Trick or treating?!) the laughs are good and you find yourself warming to the Jimmy.  He's not very smart, neither is his family, but he's trying hard and you find yourself rooting for him.

So if you haven't seen it, it's on Tuesday right after Glee, check it out.  It's pretty good!

Wedding Wednesday - Pretending I'm a wedding planner!

A good friend of mine recently got engaged.  She is a fantabulous , hilarious, wonderful person and she's getting married about a month after me.  We've been chatting weddings lately and she recently found her venue and  decided on her colors.  I'm pretty excited for this because #1) She's a good friend and I lurves her and #2) I lurves planning thing.  So when we chatted about colors I was more than happy to jump in.  So today I present you with Katie's wedding colors and inspiration; a collection of palates that I have collected for her to use as a guide and to add to.  It's obviously not the be all end all, but I'd like to think I helped her on her way.

Now, Kat's colors are eggplant (aka purple), navy and silver.  First thing I thought of was elegant, classy, a little flirty and plums (I love plums and they're a good purple color so it popped in there too!!).  Once I had some ideas and I chatted with her about it...where it was, when it was, etc etc I went back into my wedding binder (DUN DUN DUNNNNNN) and took a look at some stuff I had found while digging around for myself.  Then I ran to google, and some wedding websites, and grabbed a few more  Here's what I've come up with...

I thought this one was nice.  It's classy but it's still fun and young.  Kat is a really fun person and although I picture something formal(ish) I think it needs to have fun.

I thought I'd throw this in because it has some different elements (the cake, favours...) and it gives her some more ideas as to where she can go.  It also gives a different feeling than the last one.  This one, to me, is more formal where the first is playful.

I LOVE this one.  It's got a  touch of elegance but very fun...look at the BOLD purples and the neat centerpieces! It also shows longer bridesmaids dresses (first dresses we've seen!), which might work better for her considering late October in Nova Scotia is gettin' chilly!

And finally here's the last one I sent her.  This one incorporates more navy into the mix, not quite as much purple, but I thought it was really nice.  It shows how they can be mixed and matched and it's got a nice fun feel to it.

So those are just a few of the boards I came up with for Kat.  I hope they give her some ideas and help her find some inspiration.  I think no matter what she does it will be a BEAUTIFUL wedding.  I'm just so excited that she is going to marry the man of her dreams.  *dreamy sigh*

I could never live in England...

Mornin'.  It's dreary and rainy and gloomy here in Halifax today.  I woke up at 6:10 a.m. to a hear what I thought was my shower running, but it was just the rain outside our bedroom.  Mr. Dan didn't budge.  He kept right on snoring as I hauled my arse out of bed (an hour and a half early) and proceeded to pad around the house in my pjs, looking for somewhere else to curl up.  The pugs had taken over my side of the bed, Mr. Dan was sprawled out and the rain was pounding on my head.  Much to my dismay the couch wouldn't do it, our spare mattress wouldn't do it and so I find myself here sitting at the kitchen table drinking a glass of milk and blogging.

It's dreary outside, so dreary that I'd just love to go crawl into my warm bed and sleep the rest of the day away.  I've never enjoyed rainy days.  They make me tired.  They make me feel like I should stay in bed and get to it (whatever it is...) tomorrow.  I just know that I'm going to, eventually, get up and get dressed...then I'll head to work and sit my my dark office (I have lights but it's still dark and gloomy) for 8 hours until I get off work to go get Mr. Dan and then head home.  But today won't be all bad.  We've recently had a fashion photo shoot where I work and the photos will be up today.  We're also finishing up things from our biggest event of the year so that wrap-up will feel good.  I suppose if I lock myself in my office (and try not to look out the window) that it won't be too bad.

The other bright spot in my day is that tonight is the ROCKY HORROR GLEE SHOW! They've mashed 2 wonderful things together - The Rocky Horror Picture Show and Glee.  So in honor of the wonders of Rocky Horror and Glee I NEED to make it through this gloomy day.  Well I've got 45 minutes until Mr. Dan is up, I'm going to head back to bed and crawl up in between pugs...sounds like the rain has let up for now. Wish me luck!

Friday Five!

1) Whose a better cook, you or your spouse?
Me.  Not because he can't cook but just because he doesn't.  Mr. Dan cooks pancakes and Kraft Dinner...sometimes grilled cheese or hotdogs whereas I do full meals with veggies and all.  I think Dan could be a great cook if he wanted to be but I think he's content with me filling that role.

2) How often do you talk to your mom?
All the time.  I just talked to my mom today at lunch.  We're good friends and she only live 10 mins from my house so we chat all the time.  I also am seeing her tomorrow when we go to get our hairs did and Sunday for Sunday Dinner.

3) Are you adventurous in the kitchen or do you stick to a recipe?
Depends.  If it's something I'm trying for the first time then I generally stick to a recipe...I don't wanna screw it up.  But if it's something that I"m inventing or something that I've done before then I'll head right out and experiment.

4) Is your second toe longer than your big toe?
Yes...?

5) Do you dress up for Halloween?
Yes yes yes!!! I don't know what I'm doing this year but I'm going shopping tonight so I'll let y'all know asap!

Applesauce

I'm feeling much better now.  The cold is all but gone, my stomach has returned to normalcy (thanks yogurt) and I spent an entire day just lounging around in my bed.  MUCH BETTER.

Now, I owe you applesauce.  I did make it the other night.  It took me quite some time to peel all those apples but it got done.  But wait, lets start from the beginning: Mr. Dan and I went apple picking about 2 weeks ago. We drove out to the valley and, keeping with Nova Scotian tradition, we picked apples for a few hours.  Now, we only picked about 10lbs of apples...but it was lovely!

So Dan and I spent the afternoon wandering around the apple orchard, picking this apple

And then, once we had accumulated 10lbs, or so, of apples we paid and hopped in the car to head home.  Now these apples sat for a bit once we got home.  Dan ate some, I ate some, but mostly they sat.  I wanted to make applesauce but had to find the time.  FINALLY, earlier this week I found the time!  So here is my delicious, simple, wonderful applesauce recipe...with pictures to make you crave it!  Enjoy!

Applesauce
1 lb cooking apples, peeled, and quartered
1/3 cup sugar (more if you like it sweet!)
1 tsp cinnamon
1/2 tsp nutmeg

Cut and peel your apples.

Place them in a pot, cover with water, add sugar, cinnamon and nutmeg - boil over low heat for 1-2 hours, until right consistency.  
Once your applesauce is at the right thickness place it in glass jar and viola! Enjoy!
